What a way to kick off the perfect Valentine’s dinner! <3
1 dozen shucked oysters of your choice
40ml peach liqueur
200ml Champagne or sparkling wine
3 gelatine leaves or 6g powdered gelatine
Add the peach liqueur, Champagne, and sugar to a saucepan and bring to the boil. Add the pre-soaked gelatine leaves or powdered gelatine and ensure it is mixed well in.
Pour into a bowl and let it set in the fridge. Once set, break it up with a fork and put the mixture into a cream whipper gun and charge with two cream bulbs. Give the gun a good shake and pull the trigger over the oysters. Garnish with a sliver of cucumber, caviar or fish roe.
