This fabulous dessert is simple, yet incredibly tasty. A perfect dessert to whip up for friends and family when time is limited, that is sure to impress!
4 Granny Smith apples
4 sheets filo pastry
200g castor sugar
2 cinnamon sticks
3 star anise
50g melted butter
Core the apples, and cut off the rounds to make a square shape. Bring sugar, cinnamon, star anise and water to the boil. Next turn down to a simmer and poach apples until they are soft (not to the point of falling apart though). Once apples are cooked, remove them from the liquid and allow them to cool.
Prepare the filo pastry by brushing melted butter on one sheet, then place another sheet on top. Cut the pastry in half, lengthways, place the apple at the start of the pastry, and then wrap as a parcel, moving all the way up the sheet of pastry. Repeat this process for the other two sheets of filo and all of the apples.
Once complete, cook apples in a pre-heated oven at 180 degrees celsius, until golden brown.
Combine the water and sugar in a saucepan. Boil until it becomes a caramel colour. Remove from the heat and whisk in butter and cream.
Serve a good dollop of the sauce on a plate, place the apple on top, and add a spoonful of quality vanilla ice cream to taste.
