Recipe:
Ginger-Infused Gin:
Ingredients
100gm ginger, finely chopped
70cl Beefeater Gin
Method
Place in saucepan over a medium heat. Do not let it come to the boil. You want the liquid to stay at around 60 degrees celsius. Keep the temperature steady and leave on the stove for two hours.
Strain back into Beefeater Gin bottle. Let it cool and reserve for later.
Kaffir Lime Syrup:
Ingredients
12 kaffir lime leaves
300ml water
300ml cane sugar
Method
Place in saucepan over a medium heat. Do not let it come to the boil. You want the liquid to stay at around 50 degrees celsius. Keep the temperature steady and leave on the stove for two hours. Strain into a plastic or glass bottle. Let it cool and reserve for later.
The Cocktail:
Ingredients
40ml ginger-infused gin
20ml coconut liqueur
30ml fresh squeezed lime juice
10ml kaffir lime syrup
Method
Build ingredients in a cocktail shaker. Add ice, shake and strain into a chilled coupe. Garnish with a lime twist.
